Led by the Maître de Chai, guests were guided through the particularities of the grapes, from the thickness of the skin to the sweetness levels of each variety, gaining a deeper understanding of how these characteristics influence the expression of each final cuvée. This raw grape tasting was followed by an exceptional champagne and caviar pairing, culminating in the privilege of tasting the 2012 Millésimé, a vintage that embodies depth, elegance, and the character of an outstanding harvest year.
The exploration continued with a rare immersion into the final stages of champagne creation, as guests witnessed the art of disgorgement under the guidance of the Maître de Chai.Each stage of the champagne making process was explained in detail, from fermentation and ageing to remuage, disgorgement, and dosage, offering a clear understanding of the precision required at every step.
The experience was further enhanced by the pairing of different caviars with specific champagne cuvées, each combination carefully chosen to reveal new layers of texture, salinity, and aromatic balance. Set within the vineyards themselves, this tasting unfolded in a uniquely intimate setting, where the surrounding landscape elevated each pairing and reinforced the connection between product, place, and craftsmanship.
